I'm glad you like the anchovie 'Q sauce but I think the best will have these ingredients: ketchup-mustard-vinegar base,pepper,either lemon/lime or both juices,either one or more of molasses/sugar/brown sugar,some lousiana hot sauce & a secret ingredient here and there, all simmered on low for about 3-4 hrs. However, the BEST,IMHO,AT Luling Cty. Mkt.,is not cooked at all.....

Ouchman is correct about the anchovies, but rather than use just them, I use worchestershire sauce. The little fishies are the main ingredient in this versatile liquid. I had a friend that made his own batch and it turned out more like a thick paste. I used it as a rub at one cook-off and garnered a 1st place in the brisket category. I also got 1st place in that cook-off for my Open entry with my "Stuffed Pig Cluckers" (Pork loin stuffed with home-made chicken sausage). No one could figure out how I got the sausage into the center of the pork loin..... It was a hoot to see people trying to figure out how I got an inner and outer smoke ring in the loin.... AHHHH the joys of BBQue'n n beer drinking.......

When you get into Huntsville from Bryan, go south on I-45 to next exit (1374) Go to the left over interstate, past Dairy Queen about half mile on the right. Small building beside a church. You won't regret it!!

I'll have to second the Mt. Zion Church BBQ in Huntsville. When I was going to school at Sam Houston I ate there on a regular basis. It's only open three days a week, but very good.
Coppers old time pit BBQ in Llano is also a favorite of mine....best porkchop I have ever eaten.

In Texas there are so many options, my favorites are Novasod's in Halletsville (with City Bakery next door-some of the best bread and kolaches in the world), Ruthie's in Navasota-they serve Elgin hot links(burned a few years ago, but I think they reopened), The Salt Lick in Driftwood, City Market in Luling, H&H Cafe in Yoakum, Joe Cotten's in Robstown(heliport in back), Brush Country/Handi Stop in Three Rivers and George West, Van's in Oakville off of IH37between Three Rivers and George West, if you have to travel into the "city", Goode Company in Houston, Rudy's in San Antonio. I like to eat if you have'nt noticed...... Next topic- the best Mexican Food????

You guys do know the best BBQ is here in KC don't you? We have a couple of the top 10 in the US. I like Gates, Jack's Stack/Smokestack, & Arthur Bryant's.
