There are three main schools of barbecue.
Texas - Beef with tomato bases sauces. forgot to mention, sauce is served on the side.
Kansas City - Beef or Pork parts with a vinegar based sauce.
Carolinas - Pork, ALL the pork, chopped, mixed and covered in either a thin tomato or vinegar based sauce.
Eveyone else is just a smoked meat or a variation of the aboved.

You know, for the 1.5 years I've lived in Greenville, I have never been there. Parkers is good though(the one out on Memorial Drive, not the one on Greenville BLVD). If anybody here ever goes out towards the Outer Banks, Saul's BBQ is darn good, its in Currituck County, you pass it when you go to the beach from VA, it'll be on your left, about 10 miles or so north of the bridge going to the beach. Their fried chicken is the best, whenever I go home I usually go there and eat, and whenver any friends that live down that end of the county come to Greenville, I get them to pick up some chicken and bring it here.

Oh, I didnt get a recipe for the vinegar based sauce, my boss was sick today, so it will probably be Friday before I can get it.

According to the food channel & such, eastern style bbq is a 1/2 or whole hog
put on the pit and chopped up to hell & back (pulled pork) with sauce all over it. Memphis style is all about ribs. Down here in tx, if it was once living & now is dead and slowly cooking over post oak,pecan or mesquite at 225, ITS BBQ!

On the red sauce or vinegar I've seen a little of everything in tx. My personal favorite is a ketchup-based slowly simmered for about 3-4 hrs.

Luling city mkt. has a orange-colored vinegary tasting sauce that will knock your socks off. Luling cty mkt is so good some guy in Houston stole the name
& opened up his own on Westheimer. You Houston folks know I ain't lyin'!

Bryan-College Station also has C&J's. Can't wait to go there every time I go up there!

Got to quit thinking about this 'fore I go kill a cow & eat it or something....

Mine's a mixture of NC and Texas style. Yum..........

Yes, you are 90% correct. The other 10 is spent eating bbq. City Mkt. truly is the best business in town. Everyone else commutes to Austin to work. Most of the melons now are from the valley & Mexico. Need to come "Thumpin"!

There is BBQ in the NORTH too!
We have a little place called Durhams Best. It is a carry out only place that sells briskett, pork, turkey, chickens, sausage and some other misc. stuff.

Corner of 279 (Fletchwood Road) and Elkton/Newark Road.
You wouldn't know by looking at it from the outside (dump) , but the food is slammin.

I live about 10 mins from there...We used to go there all of the time for sausage-- i need to go by and pick some....I usually end up getting Chappel Hill at the stores.

For those that travel NW Houston / Aggieland--What do yall think of the Shell Station at 290/362? Its pretty decent, hit or miss. Usually get a big sandwich though.

That would be County Line. We'll stop by there when we're traveling 290 - it's not the best BBQ I've ever had (the sausage is a little dry for my taste), but it's better than the worst!

UMMM...UMMM.. BBQ. Funny this topic comes up. The job I do has me traveling all over the country and sometimes the world, best BBQ so far bar none is in TX and LA (not just cause I'm from there). I ate at this joint about two weeks ago in Groton CT (so called texas authentic), decent grub but when I asked if they had "links" (smoked sausage) all I got was blank stares , the waitress had to go get the manager as she had no clue of what I wanted. Folks along the east coast MD, VA etc... seem to boil their ribs and chicken first. BBQ in CA , I ate at this so called authentic TX BBQ joint near the Boeing Military Defense plant in Anahiem CA, they did'nt even have/use a BBQ pit , just big ovens. They had links though..... I'm always on the look out for good BBQ, but the majority of the time I come away disappointed by one of three reasons: price, taste or both. I'm gonna try out this new joint along the waterfront here in Port Orchard pretty soon, hope they surprise me. Growing up I recall places that looked like small portable coffee huts with BBQ pits out back have the best plates. The Lockwood Inn had good food, dont' know about now.

FYI - ALL of the best BBQ sauces (like Rudy's, Casey's, etc) have a common ingredient... ANCHOVIES
