This is probably not a problem. It could be your gage is off a little or the thermostat itself is off a little. You could put the thermostat in a pan of water on the stove with a candy thermometer to see at what temperature it opens. You could also put a good quality aftermarket gage in the engine temporarily to verify the accuracy of the oem gage. These engines won't suffer any damage unless they get MUCH hotter than that. One other thing: if the thermostat is in backwards, you'll get wild swings in operating temp. Please don't ask me how I know that.

I'm running a 195 T-stat and it runs about 190-200*F degree normally for my truck. I've never seen anything higher than 200*F

180*F is just fine.

Drive it... Its a cummins it will last forever!

Have you cleaned your rad ever or even lately? Is it a 180f t-stat? Check backside by fanblades, if oily you will have to remove it to clean properly with a degreaser, then relocate puke bottle. This will cause engine to run hotter if rad is plugged on outside of fins with oil. You mention you had rad "roded", I would guess you mean flushed internally? Can you hear fan engage, then does engine temp drop down at all or keep increasing? Have a look and let us know what you've found, temp shouldn't go that high past t-stat opening with a light load like that, unless it's full of cement.
