I think the idle setting may just be too low. When you snap your foot off the throttle, after being under load, it just stalls, like an old carbureted gasser. Make sure that it is about 850 rpm, in gear with a warm engine.

That whats i thought. Ok think about it, if the tires are spinin and you just let off the pedal they are goin to stop spinin, they will actually grab traction instantly. This will inturn slow down whole entire driveline causing the engine to stall. The only way that i know of to cure it, is to just to keep your foot in it untill your tire speed is close to the trucks speed. Any auto that ive ever been in from 89+08 wether its built, stock, you name it, they all will do it lett off the go pedal at the right time.

Mechanically speaking, either you are momentarily starving the pump for fuel, or the sudden jerk is opening the circuit to the fuel-solenoid in a bad connection somewhere.
Think of the fuel situation as sort of a big tidal-wave that rolls in, then suddenly snaps back and disappears; make sense ??
But I would look to the electrical end of it first.
