Wood fire grilling

I just saw yet another ad on TV for a restaurant offering 'wood grilled' food, seafood this time, but it's one of many places cooking food this way now.

Apparently, more people like this method of food preparation than those who do not. But I have to ask, what is the attraction to this crud? Maybe it's because of something I've seen in the past, or smelled, or something, but everytime I try it, it's like biting into food that's gone thru a structure fire. Is this just me?

Grillin' over a house fire isn't a great idea....

With the right kind of wood the smoke adds a different flavor to the food you grille.

Kinda seems all the same to me. And it's funny because growing up, when I was around a culture that dried and/or smoked just about any food you could think of, I never noticed it.

Toss a couple of mesquite chips or hickory chips on the charcoal next time you grille and see what happens.

Fruit wood or the types ofcmarc mention make the meat taste much different than pine from a structure fire.

Mmmmmmmm wood fired pizza!! There is a place here that does this and also makes the home brewed beer too. Awesome

No wonder your grillin' tastes funny. You can't grille over moth *****! You might as well light the charcoal with unleaded.

Pork shoulders smoked with apple wood at one of our competitions last year was good enough for first place and it beat out several Memphis in May teams at the same time! If any of you cook and compete you know that by the end of most cooks the last thing you want is some more smoked meat to eat! I honestly could not get enough o that shoulder. It was excellent! Apple is good! Be careful though, too much can make it go the wrong way and taste bad!

We have one of those here too, 'DeLeo's'. That's what got me started on this subject in the first place. Thought we had a full blown structure fire happenin' just walkin' up to the place. Inside wasn't much better.

I just think it's ironic that in today's health concious, politically correct world where everyone gets their knickers in a twist about smokin' and unhealthy life-styles, that everyone thinks it's so wonderful to engulf their food in woodsmoke that they'd normally work so hard to avoid.
