I wouldn't sweat it, if recruitting in your area is anything like it is on the East Coast, and you are a qualified applicant, they will wait for you. It is hard enough to get qualified applicants in the door, seems nobody wants to work crappy hours, risking thier life, for a very small salary anymore. If you are a good prospect they will give you the time you need to make your decision.
What everyone says about being honest with both prosective employers is good advice, don't want to ruin your chances before you get started.

yeah I'm only 23 and fresh out of College but I am also the newest Sheriff's Deputy for Golden Valley County ND......I wonder if I can just put a Light bar on my truck HAHAHAHAHA that would be great pulling someone over
I don't know if 15 years as a beat Cop in St. Louis qualifies me to give any advice but here goes.
First, it is like any other job, its what you make of it.
Second, if you find your personality doesn't jive with the job don't wait around to get out. The longer you stay; believe me, the harder it is to get out.
Third, the cemetaries are full of hero's. The most important thing in this job is getting your shift done without getting hurt or killed and returning to your family.
Fourth, if you don't know, ask. Thats what the old timers are for.
Fifth, Listen to the old timers.
Sixth, S#!t happens!
Seventh, You now belong to the biggest family in the world. Welcome to the family.
