On your question about just water "damaging things" I would say no, not as long as you don't spray too much water. The water greatly reduces the EGT's of a high performance diesel engine by "cooling" the air/fuel mixture.
I don't use the methanol in my 12 valve engine because I had a problem with "detonation", that being, a noise much like a "spark ping" you hear in a gas engine. This occurs in the Cummins 12 valve engine more so than on a 24 valve or CR truck, because the timing on the 12 valve engines is mechanical or "static", meaning that if the timing is at 16 degrees it is 16 degree at idle and 16 degrees at WOT! On the CR or 24 valve Cummins Trucks, they have "variable timing" based on engine electronics. In my truck, the "detonation" with methanol is happening because of the high timing and the fact that methanol will "cook off" before diesel fuel because of it's lower flash point.

Hope that makes some sense to you. I have to have the water to keep my engine cool. Without it I would easily have EGT's above 1800 degrees!
One "formula" passed around in the diesel world that I always liked is this:

Air+Fuel=POWER, but a "spin-off" of that formula is HEAT!! And the more air and fuel you have the more heat you will have. My truck is living proof of that!
