rear gears
I have 3.54's... I think most people would say the 3.54s are a much better idea than 4.10s, especially with the 2500rpm governor. I even like my 3.54s with the 35" tires.
Be careful... the late model d70 trucks with abs have a special short thickness ring gear to accomodate a an abs sensor ring that gets sanwiched between the carrier and the ring gear. Not all dana 70 ring and pinion sets will fit in the 1st gen dodges.
I would leave ring and pinion setup to the professionals. Its really easy to screw up, you can usually get lucky by copying the same shim stack that is under the carrier you take out, but doing it right involves setup bearings that can slide off of the carrier easily.

I have a friend who installs gears for a living, I just let him do all mine 
It is alot easier with the right tools. Dana axles are a PITA for setting up gears. Lots of pulling bearings off and pressing them back on to get the shims right.

If you have a good 4x4 shop near you they can put your gears on a limited slip carrier and set it up for you. 4x4 shops are usually the best places to get it done because they have lots of experience setting up gears.
