what should I do next?

I have a 95 with 260k miles, auto and 4x4, tranny was rebuilt at 218k just before I bought it. Fuel plate was turned up by previous owner. I just payed it off and put a K&N intake in it, the 4" exhaust goes in next week and Im looking at Bosch injectors.
Truck is used mostly for work, I pull a 16' trailer loaded with plumbing pipe and materials and sometimes pull a flatbed with quads and camping gear.
Im kinda new to this and Im wondering what you would recomend to get more power and performance, not that Im at all disappointed right now but if it has more to give then I want to use it.

I have the guage cluster next to the windshield that shows egt, turbo boost and tranny temp. What is GSK?

A GSK is a Governor Spring KIt. It allows you turn more rpms and fuel at those rpms. If I were you I would put some $$$ in the trans before you get to modding to much. The stock trans wont take to many bombs before it puts you in tennis shoe mode.

The tranny was rebuilt just over a year ago, I have the paperwork for it and it says it is an "extreme". How extreme? I dont know, but it shifts great whether towing or not.
In talking to the previous owner he said he adjusted the governor so it would not de-fuel until @ 3400 rpm. Is that what the GSK does?
The PO also told me that he replaced a certain pin that could have rattled out and that was a commonly needed fix.
So it looks like the injectors will probably be the best place to move to next, huh?

Certainly sounds like the GSK. The pin is the Killer Dowel Pin (KDP). Good that he took care of it as it has the potential to cause expensive repairs.

If you can find out from him if he changed the timing from stock. Bumping it up to 15 - 16* will gain you some pep, better fuel mileage and lower temps.

It usually runs between 600-1000 on the egt's, on my last trip to Utah I had it up over 1200 on a couple of hills. thats why Im going for the 4" exhaust. I have only noticed the turbo pulling about 20 when I gun it. It does lay down a nice thick layer of smoke when I really get on it. Not sure about the timing. Thanks for all of your suggestions, Im glad to get some experienced opinions on this.

First off I would get a boost elbow for the wastegate and get the boost up to 32-35. Run adjust the star wheel to a level that you are comportable with along with pushing the plate forward. There are a lot of things you can do for free or at least cheap before you get to buying stuff. After that injectors would be good.
