I understand that it is not uncommon for a stock truck to hit 35, though it's usually around the low 20's.

Maybe you need a gauge that has a 60 max psi

Oh, and fill out your sig line w/ what you have and what's done to it. Helps though who can actually help

With that plate, 35psi is fine.

Big Perm missed that it has a plate in it.

Worry more about Exhaust gas temps.

Sorry for the dumb questions. Is that the same as the pyro temp?
I am planing on using this truck to pull a 10,000 pound toy hauler. The man I am buying it from said the pyro temp will go to about 900-1000* with his toy hauler going up some of the larger grades.

Yep,same thing. 1000 is fine you just don't want to take it past 1300 or so for any length of time while pulling. That temp should be pre turbo location of the probe. Hah,,banned! Not here, this is not THAT site!!

You need to find out if the pyro probe is mounted pre or post turbo.
If it's post 900-1000° is getting very close to the danger point and could even be exceeding it as in the post location the gauge is slower to react.

900-1000° sounds too low in pre turbo location with the mods done on this truck plus a hill and trailer.
35 psi boost is just fine but you probably don't want to go any higher.

Generally the post turbo temp is about 300° lower than the pre temp but this doesn't always hold true. People who have a probe in both locations say that it's very inconsistent and the difference can sometimes jump up to 400° difference between locations.
That's the big reason it's recommended that the probe be installed pre-turbo especially on a modified rig. You might want to consider moving the probe.

To lower egts the engine needs to breath better. According to your description of the truck and assuming the cat is gone about the only thing missing is a larger turbo housing or different turbo. You can also slide the plate back a little to reduce egts but you will lose power also

Here is a guy who had a pre- and post-turbo pyro and used a toggle switch to check one then the other. Enjoy your new ride, and like some will say, "no such thing as a stupid question." If you have a question, ask. Better to do that and not risk damage to your new truck!
