Winter Texan
Rockport, TX is what I recommend. Under an hour away from us here in Corpus Christi (and a few hours from Houston or San Antonio for day trips), it is nicer than the RGV in all respects, IMO.
We've got a very quiet park near Cedar Creek lake in Malakoff, TX. 100 miles southeast of Dallas. Very safe friendly and reasonable. People never leave, but we have 1 opening as of now. PM me if that's an area you would like.
East and South Texas are 2 completely different animals. Terrain, foliage, people, attitudes, everything. Narrow it down and you might get better answers.
FYI, quite a bit of S Texas will be hard due to all the oilfield guys down there. That is if you're not headed to a "resort" park.

Stayed here on a Texas vacation several years back and it was a decent park. Seemed like a lot of seasonal snow birds had rv's there. http://www.ccrvresorts.com/features/cdr.htm

And what's wrong with Tilden or Cotulla? Smack dab in the middle of nothing
, or smack dab in the middle of everything depending on how you look at it.
Most snow birds go to the lower Rio Grande Valley, Bwonsville to McAllen. It is warm, near S. Padre & Mexico, and they cater to the snow birds.
E. Texas is rural, mostly, and heavely wooded. It is about 10-15 degrees colder and outside the cities, not as much to do.
Another option is upper Rio Grande, including Del Rio, Big Bend National Park area. This is Chihanna desert area, with mountains, river & desert. Check out BBNP web site pics. It is cooler than lower Valley, but few nites under freezing.
Better yet, drive to Brownsville & drive N. along the river, hitting RV parks and State Parks along the way
