Did you check engine line come on? I've pulled with my truck until it light check engine light came on. I just pulled over and let the truck cool down, still running of course. Your rad is dirty. You might have to take it out of the truck to get a good cleaning. I use lots of de-greaser to clean mine. The intercooler should be do. Auto truck will typical run hotter than stick truck pulling because of the heat exchanger. Another way to reduce heat is to cut the coolant going to your tranny heat exchanger. Dodge should have just put a valve there for hotter ambients guys. I like being first up the hills while towing.

I am seeing the exact same problem, mid-afternoon, no load, lots of traffic, and my t-gauge is topping 200-220. Once I can get my rpm's running around 2100 for a mile or more, then it will start cooling down. Have had my truck overheat 3 times now pulling my TT (28' Prowler, 8200#) on an uphill grade, peg out at the red line and Check Gauges lite come on, which has really worried me, I have to pull over and let her cool down for about 5-10 minutes then finish the hill (about 3 Miles 6% in all). I guess I am gonna be doing a flush and clean of my rad this weekend.

Clean your radiator, and I mean by pulling it out and pressure washing it. problem solved.
Next, get a new thermostat. Don't worry about other ones with different temps, just go to a dealer or a Cummins shop with your engine serial number and get a stock replacement stat.
Next, dump a bottle of Redline DIESEL water wetter in the coolant.
You will never have a cooling issue again, loaded or unloaded. Did this to both of our trucks and can run uphill all day long LOADED towing trailers in summer heat and stay at 210*.
Next, get a new thermostat. Don't worry about other ones with different temps, just go to a dealer or a Cummins shop with your engine serial number and get a stock replacement stat.

I spoke with Redline and the Diesel water wetter is for OTR trucks with different coolant formulations.
If you're running the better FG coolants with OAT and such, then the diesel version is probably better. If you're just using the OEM EG like me, then get the regular WW.
Call Redline to be sure...
