Who else is doing the bird this year?

Just wondering who else was cooking the bird this year besides me. Deep fried? Smoked? Tasty lookin recipe you saw on TV?

Why would you go to the bother of cooking your own food, eating your own left-overs, cleaning your own dishes, rearranging your own house and putting all of your tables and chairs away for Thanksgiving when you could just go to somebody else's house?

Which reminds me that I have to be on my way now...

Smoke it!

I smoke everything...well...not everything...but everything as far as food goes. I run the smoker up to 250-275 and put the bird on in a metal pan, breast up, with some oil on it. I let it brown then cover with foil twice. Let cook for 4 hours and wala! One big smoked bird. I use mosqite and pecan wood at the same time. I'll post a pic of the smoker here once it is approved. It is rather large. My inlaws put my smoked bird on the table in a different pan next to the oven cooked bird (since some don't like a smoked flavor) and there has not been once that mine wasn't completely gone and the oven pan was half full. You just can't beat it. And, it takes half the time.

Here's the pic! The key to keeping them moist is wrap with foil twice, make sure the corners are real tight, and put a pan of water between the bird and the firebox.

I smoked a couple turkeys last year, used a combo of oak and hickory. Came out super tasty but a little dry, I think it was the birds I used. So much moisture cooked out of 'em that I never had to add water to the pan! Never had anything even close to that happen before, I'm pretty sure it was the turkeys rather than me mangling it for once.

Bah, I knew I forgot one, couldn't think of it at the time though. Had turkey aroma wafting through the air, and was eyeing the loaf of fresh sourdough I'd just made thinking nobody would notice if I was to slice it and pilfer some early.

Yup, I couldn't vote either because I fried mine too. I even came up with a great new marinade recipe. Last year I smoked one for about 2-3 hours then I fried it..Yum...

I hear frying your turkey is pretty good.

But one thing... where do you put the stuffing?


You get flavor by grilling your turkey (all 18 pounds of it in my case) along with another 10 pounds of stuffing stuck in every orifice of that turkey

best stuffing i make comes from the turkeys insides

Good luck with it Scotty, it's not all that hard. Just be sure and use the actual turkey drippings for the gravy, canned chicken broth is cheatin!
