I am changing my coolant today I bought Peak 50/50. Is Peak coolant up to par for the cummins cooling system?

I have used it once, didn't have any problems. But if you can find the Zerex G05, not only is it cheaper, but a better choice.

Peak is fine, but I think you'll find it cheaper to add your own water.
