I have noticed that there have been a few questions about a H.O. engine. I just purchased a 05 3500 and now I wonder which engine I have, are there 2 different engines and if so how do you tell them apart.

Well I'll give you what I know about HO/SO.
Dodge/Cummins in early 2004 released the 325/600HO(High Output) Cummins in the 2500/3500 Ram trucks(These commonly referred to as 2004.5). This was to be able to sell one diesel engine configuration in all 50 states and meet EPA/Emission requirements.
Before this there were a number of different Cummins configurations SO(Standard Output), HO(High Output), California verisions with Catalytic Converters, I think there were a couple other areas that also required specific configurations to meet local Emission Regulations. They had different HP and Torque specs along with area specific equipment and programming.
I believe that since the 2004.5 release that all are normally HO engines. Yours should be a 325/610 HO Cummins. Should say on the Window Sticker or truck invoice sheet.

2003 S.O. CA Emissions: 235HP/460lb.ft. Available with NV4500 or 47RE
2003 H.O. Federal Emissions: 305HP/555lb.ft. Initially only available with NV5600
