What Temperature?
From what I understand the stock guage is NOT a real temperature reading but an algorithym as calculated by the computer. However, I believe you're OK as I see those readings on mine when I'm towing too. Well within the safe range, especially with the AC on and towing in hot weather.
that would stand to reason since, unless the insight differs from the juice w/attitude and has a probe that is installed on the radiator taking real-time temperature measurements, it is getting the readings from the ECM the same as the stock gauge and would be reading the same supposed alogorithm GMScott has mentioned.

Towing over the Donner Pass In california this weekend I was hitting the hi temp setpoint on my Edge at 220. The gauge was reading just right of center bu nowhere near the red. I had the edge set at 212 but was hitting that quite a bit so went up to 220. Hottest I saw was about 224 and that was with 2 quads on the rear and a 9K trailer. Donner is kinda a big long pass too
