It just tells you the outside temperature. If you could reset it it would just go back to the same temperature unless you teleported the truck to the north pole then it would read different. You may be referring to the fact that you can reset the rest of the computer and assume that this resets as well? answer no - at least mine does not.

1st thing you should do is fill out a Sig with all the Truck info, So we know what we are dealing with... Under User CP...

A blind shot at it, unhook all the battery cables for 1/2 hour, Make sure all connections are clean B4 reconnecting...

Was that after some long driving?

They do not always adjust themselves much in city traffic.

Overhead displays have been known to read incorrectly and/or be slow to respond to change. On the 05-06 models, there is/was a TSB out for the overhead display reading incorrectly or slow to change and can also affect the interior lights.
Mine had interior lighting issues early on, but the software update fixed it. The general consensus is that if you un-hook both batteries for 20-30 minutes, it will reset it.

Mine get bugs in it, Im sure its right at the front when you open the hood, just above the bumper, I clean that sensor and it seems to work again, sometimes I just hold the reset button down on the overhead. who knows hahaha

Mine often reads -40 degrees F when the temps go over 110 degrees. I'll look at the sensor, but the bottom line is it's too hot in Phoenix.
