03 3500 NV5600 Clutch Pedal Adjustment?

Hey guys, this truck was a first one for me, I really only have experience with Fords, was a powerstroke tech for a good while, had someone bring me a 03 Dodge 3500 with a NV5600, said he was having clutch issues, after some looking into it found the pressure plate was warped, so he went and picked up a single disk clutch with a new flywheel, throw out bearing, pilot bearing, and a slave a master cylinder, installed it all, install went smoothly and truck at first wasn't doing this, but 5 days or so after regular driving a grinding noise started coming from the bellhousing with the clutch pedal depressed all the way to the floor. The truck still drives and shifts fine if you press the clutch down right before you hit the floor, so after seeing this I'm assuming the pedal is out of adjustment in terms to distance to the stop on the firewall (guy bought this truck with a dual disc previously installed) I can't find anything on how to adjust that, was hoping I could get some help here, not sure if it's because the truck previously had a dual disc or if it's just a fluke.
Thanks

Here's the installation and adjustment guide to adjustable rod clutch hydraulics.
