The mechanical lift pumps on the 12 valve engines don't generally have problems, so I don't really see a need for fuel pressure there unless you really want one. The 24 valve engine is totally different in that the stock lift pump is garbage the way Dodge implemented it, so a fuel pressure gauge on a 24 valve truck is mandatory. I wouldn't worry about it on a 12 valve truck though.

Engine oil temp would be interesting, but also not strictly necessary.

The fuel pressure and egt would be the two to have if you can only afford or only want 2. In my opinion.

There has been lots of discussion on these mechanical lift pumps for the First gen engines. As soon as you start turning them up there has been spoken of the lift pumps being pulled down to 0 PSI. That is probably mention of a fuel pressure gauge. Due to this that is why there is information for an updated low pressure lift pump.

The ones I'm getting are Pyro - 1600, Boost - 60 PSI, Fuel Pressure - 30 PSI.

The fuel pressure is good for basically what RuralCruiser said. Plus, you can also see it drop slightly when it comes time to change your filter. Monitoring the pressure is a good way to tell if the LP is bad if you experience a sudden decrease in power, also.
