How important is the fuel pressure gauge?

Which one are you referring to ? The $265 kit says "made in chine" on it. Does that matter, or should I be looking at a cummins oem unit. ?
Yes the $265 kit, no worries about the made in china as almost everything is now days.
There are a few different pumps that all look the same externally by different manufacturers (internals are different however), this one is the best one (larger volume and you get your pick of spring pressure).

Speedo is ok, as the only part you cannot see is from 0 to 25- 30MPH. I can still see everything else except for 75 and higher...
but then again if I'm going that fast... who cares ? right ?
What's really cool now is to watch the temps fall before I turn the truck off. I always knew that you were supposed to wait to shut the motor off, but never really knew how long...
Now I just see the needle hit 300 and I can turn it off...
