The first thing to do is to check it using a known good mechanical gauge at the tap on top of the oil filter housing.

High oil pressure can be caused by thick viscous oil in cold temperatures, defective or restricted oil filter, a stuck regulator spring or even a spun bearing, anything that restricts the flow of the oil.

But first check and make sure the gauge is accurate.

Anything above 9# at idle is considered good by the book. Anything over 30 when at speed is considered good.
Most when tight run 20 - 30 at idle, and is held around 60 or so at speed by the relief valve. Not unusual to see 80 or more when the oil is real cold.

The main thing about oil pressure is that it will have a "normal" pattern, and if it changes, you know something changed, ie something's wearing out, or the oil is getting diluted with fuel, etc. It's an early warning system.
