I kinda got taken to the cleaners for my gauge install... $300 for labor and some supplies for the install, they also put the probe after the turbo. Their claim is that if the probe were to somehow come loose, the turbo would eat it and be destroyed...
1. What is the EGT difference pre and post turbo?
I'm taking it in to get a 4" exhaust installed. He said he would be willing to move it to the manifold where it belongs. He's going to have to drill a new probe location anyways, since the downpipe is being replaced...
2. Should I have it installed at the "right" spot, or should I just let it ride?

I'm not sure that it really matters pre or post turbo. But the difference is usually in the 200 degree range hotter in the manifold than in the downpipe + or - from what i've gathered. The $300 sounds a little steep, but your buying time, experience and the piece of mind that you aren't going to cook your computer.
I had my pyro on the cold side for a year or so, always read around 1100 degrees under slight load, so I thought I always needed to back out of the throttle. When I installed my Stan's I relocated the pyro in the manifold, and now I have a hard time even getting the gauge to show 1100 degrees. So IMO put it in the manifold, much more responsive readings.

The probes should read exactly the opposite of what you experienced...
I have my probe in the elbow of the exhaust pipe and my alarm set to 950* and it has only gone off 1 time - Going into ChooChoo on I-75 and trying to maintain 70 mph with the bed full of ~ 3000 lbs of shop tools - lathes, drills, etc.
