swap 360 for 5.9

I would like to start out by saying this is a great forum. There is alot of good info hear. That being said, I own a 97 3/4 ton with a 5.9 gas. I have just bought a 98 3/4 ton 5.9 12v diesel and 4.10 with 82000 miles that was totaled. The guy had stopped on the side of a imbankment, when he started backing up it went over. I am in the process of swapping cab and chassis.
The preveous owner had done some work to the 12v. It's got 2 size over injectors, 4" staight threw exhaust, K&N cold air intake and he said he turned down the pump. I guess the main question is why would he install larger inj., but then turn down the pump. I have not driven it, but it seems to run good. What other thing should I do while I have the front clip off. I did ask him about the dowel pin. He said no, so that is one thing I will be doing. I will also be adding egt, fuel and trans temp gauges.
People here seem to talk about adding a plate? what is this for.
Any help would be greatly appreated.

changing the fuel plate adds power. I run a 0 plate on my 94 and dont have any problems with it i just keep an eye on my EGT to make sure i dont melt a piston but it rearly gets that high. TST has other levels for sale and say what type of power you should get from them. Here is the link.

He probably turned the pump down to save the clutch

He probably did it to save the clutch. I'd imagine all he did was slide the plate back a little bit. If that truck has a K&N kit on it do yourself and your engine a favor and get rid of it. It does not filter nearley good enough for our trucks. Many people on here have had them and got rid of them.
