Have you actually weighed it ready to go? Or is that what Cardinal say it weighs.
I used to have a 30FK Dutchman that was supposed to weigh 6500 lb with 830 lb tongue weight. By the time I was ready to hit the road, it weighed in at over 7500 lb, and 1100 lb. tongue weight. That front kitchen with all the pots, pans and food, plus the gas bottles and battery is a killer. My 93 truck was rated 900 lb. max for tongue weight, so I was over by a good 200 lb. I suspect you may be too. However, it did tow very well for over 20,000 miles.

I am not speaking for the receiver hitch, but the truck will pull twice that, easily.

With a 2500, you're a lot better off with a TT than you would be a 5th wheel. The higher pin weight of a 5th wheel as compared to a TT quickly puts a 2500 over its 8800 lb GVWR.

So, are you over your GVWR? Only the scales will tell for sure.

It sounds like you are good to go. If you think you need more hitch security go with the putman class V hitch it has a 15,000 lb rating and I saw them on e-bay for 125.00 I have a 29' forest river and tow with no problems or concerns just give it the respect it deserves.
