how do I check my fuel pressure

You'll need a fuel pressure guage in the cab to see the readings through the throttle levels of the truck.

 

how do I go about getting that and can I hook it up myself.know this I'm just learning about these trucks.

You could hook it up yourself depending upon your mechanical abilities. My kit was ordered from dieselmanor and it came with fuel pressure, exhaust temp, and turbo boost gauges. The instructions are extremely complicated.
