Baked Beans
This is how we do it when out working cattle or riding all day:
1) Large pot( cast iron works best) or dutch oven and a hot bed of coals
2) put a couple inches of beans in the pot, cover with a thin layer of brown sugar , even better if ya can get it, powdered molasses.
3) layer with bacon, or better if available, bison flank cut into thin strips.
4) repeat until 1-2 inches below top of dutch oven or pot.
5) top with layer of thin sliced sweet onion or those little babby onions
6) bury in coals and put a thick layer of hot coals on lid
7) DONT touch for at least 3-4 hours
8) serve with any kind of meat and COLD beer
9) relax, relive campfire scene from BLAZIN SADDLES and ENJOY LIFE

man, I don't know who you'd have to kill to get the recipe, but Dickey's BBQ down here in TX has some of the best beans I've ever tasted... They're jalapeno spiced (pretty snappy... good excuse to drink beer
) and very smokey. I don't know if the smoke flavor comes from their smoker or from a bottle, but it's **** good!!!!!!
I don't like their BBQ sauce as much as some of the other BBQ joints down here, but their jalapeno beens are 2nd to NONE!

I spent a week in Plano a few years back, and that's the only place I ate at, even with a corporate credit card! Everything Dickey's has is good. The only Dickey's up north is in North Jersey near the end on the Turnpike. We stop all of the time when we get by there for baked beans and pulled pork.

IMHO, I think the key to great beans is bacon, onions, molasses, and long, long, long cooking times.
You cant have too much bacon or molasses or onions or cooking time! Cook 'em low and slow.
BTW, the guy from Maine gave my favorite recipe.
The gas you pass is kinda fun too! Anyone know all the types of farts?
