Can anyone tell me what resets the distance to empty on the overhead monitor?

Here's my SWAG on it.

I believe the system calculates it based on the amount of fuel in the tank and the calculated MPG. They probably use a moving average of the MPG, so that the DTE reading doesn't jump around.

I don't think it is really reset. I imagine it is calculated at some short interval, and when you fill the tank, the next calculation will based on a full tank, instead of whatever level it was when you pulled up to the pump.

Example on our 02 Running around town
Overhead shows ave MPG 11.0
Fuel gage reads 1/4 9 gallons remaining. DTE reads 99 miles
I put 10 gallons of fuel in. Fuel gage reads 1/2 DTE reads 209

On Hwy, ave MPG reading 20 MPG. 1/4 tank remaining, DTE reads 180 miles.
I add 10 gallons of fuel DTE goes up to 380

As I drive the ave MPG changes, as will the DTE reading.

Does that clear it up?

Yes, combined with the your computer's idea of what your fuel mileage is. Then it calculates DTE.

I am trying to figure out how I can shut off a transfer pump that's going to pull fuel from an auxillary fuel tank
I'm looking for any ideas

Not sure what you are doing with the aux tank.
Transfer fuel to the main tank to fill it?
Direct feed to the engine?
How large is the aux tank?
A switch and a shutoff valve would close the feed from the aux tank.

So, what you really would like to know is, "How do I automatically detect when my main tank is full, so that I can shut off a fuel transfer pump?"

Do I have it?

I had an auxillary fuel tank installed in a Lotus. Like the system in the link, I never had to worry about fuel transfers, either. My fuel gauge automatically read both tanks, fuel was drawn from both tanks without any manual valve fiddling, and the system never gave me bit of trouble in over 45,000 miles of use.

The "system" was a T fitting.

That would be hard to do when the aux tank holds 95 gal. and sitsa foot above the main tank. I would need a way to keep the main from over flowing.

I know. I was kind of making fun of how complicated today's vehicles have become. I doubt there are too many vehicles made today that could use a simple T fitting for any aux tank. Too much plumbing these days, what with return lines, vent lines, vapor capture issues, etc.

Looks like J BODY may have found you what you need. I hope it works well for you and isn't too expensive.
