What causes smoke?

My truck is just over 50,000 miles and I recently noticed a little white/grey smoke. It's only when I really step on it and not a big cloud, just a bit of haze spread out behind me. It happens at one intersection coming home where I generally need to go 0 to 60 as fast as possible to get into traffic.

I don't think this used to happen, but maybe it did and I never noticed?

What causes smoke? What should I be concerned about (if anything)?
How can I find out - eg diagnostic steps or other symptoms to look for?

Before my last oil change I sent away for an analysis kit, but it never arrived... would that be a good next step?

cold.

we got that. It's been a mild winter and now it's a silly temperature like 10.
I'm really not eager to worry that somethings wrong with the truck, it's just that when things seem to change I want to know why.
