I'm doing the same thing to my rig, here's what I am using.
NV5600: 4 quarts/1 gallon of Amsoil MTF synthetic synchrommesh
Axles: 11.5 quarts of Pennzoil GL5 75W140 synthetic (2 gallons with the stock diff covers, aprox. 4 quarts in the rear, 3.75 quarts in front, clean and reuse gasket as long as it's in good shape); torque diff cover bolts to 16-20 lb/ft. I recently installed a Mag-Hytec rear diff cover and really like it, changing the differential fluid is much easier, no more removing the diff cover and it holds a lot more fluid.
Transfer case: I believe it's about 4 quarts, I have yet to get to the T-case fluid, I baught a case of Amalie ATF +4 Synthetic.

I bought 8qts for the front/rear diffs, still have half a qt leftover.
I did the 1/4"-1/2" below the fillhole, as recommended..
I used Valvoline 75w90?(ill double check) non syn
3qts for the transfer case(I actually used a hair more, filled till it came out)
ATF +4
For the nv5600, cant really help much there, but in my old nv4500 I used 1gallon of Syntorq, got it from standard trans in Ft Worth...

4 quarts is to fill the NV5600 up to the factory specified level. I've also heard about running more fluid in the tranny, but my truck shifts fine as is so I'm going to go with the factory fluid level.
i recently bought some trans oil from the dodge dealer and they sold me mopar trans oil it says nv3500 is it the right stuff? and does it matter mcuh if i run somthing differnt like the ams oil ?

Big difference between the factory fill and Amsoil MTF is that the MTF is synthetic. And by overfilling the tranny by 1-2 quarts provides plenty of lubrication to the upper bearings.
