Rising temp with 1/2 throttle, also leaking coolant
Lately my temp gauge starts to rise with 1/2 throttle, empty or loaded. Just pulled a load of cows (23200 lbs gross) ~260 miles on interstate & backroads. The truck did not run hot just spiked a temp(+200), temporarily by the in-dash gauge with ~1/2 throtle. Any good ideas?

I'd say that was normal. Nothing to do. Mine will spike up a little over 200 for a few seconds not even towing...just getting on it some.
I'd say if you get up to 220-230+ sustained then you would have a cooling problem.
I think you are good.
