Thermostat

Today as I was driving home from work I was watching as the engine was warming up. If I drive at 40-50 mph I would drive about 6-7 miles before the engine was up to temperature. Is that about normal @ about 65 F. outside air temperature?

Yes, it is normal. These engines weigh about the same as 2 V8 gassers, about 1100 pounds. And they put a lot of air through when running and so run cooler. The thermostat doesn't open until 190 degrees. If it fails you will probably never see 190 unless you have a dirty radiator, or pull very heavy loads.
