questions from the new guy

Got a couple questions for you guys. I have recently bought a used 99 Freightliner fl60 towtruck. It has a 215 hp 24v cummins in it. I got all the service records for it, it has a reman injector pump, new head gasket, not sure on the lp, 6 speed manual tranny, 1/2 fuel line to the lp. My questions are it seems to have a miss or two thru the entire rpm range that I am trying to figure out, havent checked for codes yet but will soon. Also doensnt seem to have the power it should, the last towtruck i drove had a 12v cummins that would run circles around this truck and they were of comparable weight.
Other question is went looking for the schader valve to test fuel pressure after about an hour I figured out that my larger truck has a much larger power steering/ power brake pump that would block it so they dont put one on. The line between the lp and injector pump is moslty rubber on mine, can I tee off of that to get pressure reading. Kinda worried tho, went to clean my IAT after reading a bunch of threads and found out who ever did the head job forgot to plug it back in, 20,000 miles with no IAT.

Sorry forgot to mention it has same motor as a dodge pickup would have.

I would think that the IAT sensor unplugged, the truck would run like crap. Have you driven it since you plugged it back in? I would also check all of the other connections, if they forgot one, they could have missed more.
