alright ill go check all that stuff but now i have a slight knock from either the valve or rocker arm any suggestions there? also why would it idle and rev up fine but then have fueling issues when under a load. also when i start it and rev up it the motor sound like its missing until the truck warms up??
If you had the head off you have to check the valve clearances. One tight valve could screw up the whole thing. I would start there. If the head gasket is no more than a couple of thousandths thinner then you will have many tight valves!

If its too open you get too much air and can lean mix the power stroke and /or hit the top of the piston.
Hearing a knock may be easier by placing a long screw driver against the rocker cover and the handle end to your ear. I can never tell if its the vp clatter I am hearing.
Many things come into play during a head gasket r/r on these. Backstep each event to see if you missed anything.
