Wheel hop when starting to move?

Pilot bearing or input shaft bearing bad?
Either one will let the clutch disc bounce around.

hey-Hey!!!,
My 1990 behaved just as you describe. It is combination of grabby clutch and spring wind up. It was worst with low engine rpm and attempted gentle clutch engagement like you'd wish to do when in a parking spot. I replaced the clutch with a stock Luk 05-101 from the 245 hp HO motor( along with a HO flywheel and starter spacer ). This behaviour went away. I can still feel the springs wind up( traction bars would be *VERY* useful ), but the spring wrap/clutch engagement chatter resonance is history.

I went through the exact same thing. It majorly sucks @$$. I had a new nv3500 put in my z-71, new sachs OE clutch just like you, flywheel resurfaced. It was great for about 2000 miles and then the lurching started on a trip 800 miles from the shop. Best way I found to work around it was to almost pop the clutch and back in right away just to get the truck rolling a little, then take off riding the clutch a little more than normal. Lots of fun with a trailer on a hill at a red light.

Took it back to the shop when I got home and it turned out to be the brand new pressure plate had cracked in 2 spots. The mechanic and the manager at O'reilys were unphased as if this is a common issue. O'reilys paid the labor on the fix as well as the new clutch kit. Still going strong today. It never did it again.
