New fuel pressure gauge bouncing???
On my gauge I had to screw a 45 degree 1/8 pipe M/F fitting in to get the line to clear the throttle linkage. The 45 degree fitting has a hole on the male end that measures about .220 diameter. I took an old Mig welder tip(.023) and smacked the end with a hammer to close the hole up. Then I turned it down in a lathe and cut it off to fit into the brass 45 deg. fitting. I then soldered it in place and re-drilled the hole to .015. Smaller and the gauge is too slow to respond, over .020 and it still bounces a bit. It's about 28 at idle, 32 once going, and 45 when I turn on the aux. pump.
Here is my new EV2 FP gauge in its new home. Also the new lift pump and sender in the Banjo from Geno's.

I also replaced my IC boots. Thought I would squelch any issues with 17 year old boots but mainly I just preferred the clamps that came with them. Much easier to deal with.

It's not too expensive and an easy MOD. They are sweet "Blacky". Now I'm looking at my old "Banks" gauges and thinking hmmmm. I just picked up an HE351cw that was rebuilt. I'm gonna PM you soon with a question or two.
