I want going to up my hp level to around 300+hp and I know I'm going to want to change the head gasket. My understanding is that there are 3 different size head gaskets. Any recommendations on which one?

Get the 0.020 oversize one. It'll make life easier on the engine at that power level.

I went with the one Wanna recommends, I am peaking at 42 lbs boost, Just a lil more with the water meth running, The engine is really smooth up at 2500 rpm, right to 3K rpm, I had about 316K miles on truck when HG failed. Not a bad job, Well worth the time.
The one Wanna, is mentioning is only .5mm thicker than the thinnest one.
