Proper water temp?

I did a search figuring this was asked a lot but mostly found people asking about their water temp gauges cycling. Mine does not cycle, rather it climbs to ~170 (about halfway in the section of the first enclosed box), and never gets to 190. Granted, I have not towed with the truck or taken it on any 100+ mile trips, but the times I drive it the engine has enough time to fully warm up. My question is, it is ok for the water temp to be around 160-170, or should it be around 190 (exactly halfway on my gauge)?

Diesel engines run cooler than gassers, even 140° is fine.
