If I rolled my truck over.....

What fluids are going to leak out and from where?
How do I keep them from coming out if I roll it on its lid?

If I rolled my truck I would be more worried about walking away, than worrying about where fluids were going to escape .

It is pretty much impossible. If the truck is rolled over, there are going to be parts that have been jarred loose. I hope you didn't roll your truck.

Actually if you were turn your truck upside down very little in the way of fluids would escape. Probably the most would come out of the battery and windshield washer bottle.

Now when you turn back right side up a little bit of motor oil may come out of the blowby but what would be of more concern is that your inner cooler might be about half way full of the oil that should be in your engine. You would have to top the oil up and expect it to smoke like crazy for quite some time.

Perhaps this is a good time to quote that old line...."Please don't try this at home."

It's not exactly a low-impact activity, on the place you roll it, your truck, or yourself.
