I'm in South Texas, & lately there are lots of vehicle thefts..
I have a 97 Dodge 2500. What would be a good way to shut off fuel from the inside of the cab, or disable the ignition, so it can't be started if I park in a public parking lot, Walmart, etc.

What you can do is put a hidden switch in series with the clutch safety switch.
Of course an auto doesn't have the switch but the connector for it is there with a jumper wire.
Trick switch if you don't use the cig lighter is to disconnect the lighter and use it for the switch. Push in to start. You can even take the lighter with you when you leave your truck.

A pro will get it no matter what you do but those tricks will stop the joy riders. If you disconnect the sol you can still pull the sol up with a piece of balin wire and jump the starter with a screwdriver

If they know to pull up on the solenoid, they probably know to see if its plugged in too.
I ran the remote turn on from my alpine deck to the clutch safety switch. When you're in a shady neiborhood and you take the faceplate out of the deck anyhow. No faceplate, no power at the deck and no power to the switch. I know nothing beats a flatdeck and a raging criminal comin' off a meth jag, but I thought it was pretty clever.
That's one of the reasons when my fuel shut off solenoid failed (rare... it actually failed without being burnt up), I went with a shut off cable.
I leave it in the "stop" position. It is unlabelled.
"Pros" will do all sorts of things, but in my experience a few small measures that add precious time to the criminal's "job" will help save your vehicle. Also remove faceplates, valuables from the vehicle, etc.
The hidden clutch safety switch/relay off of sub remote power signal is a good idea.
Edit: Although on my deck, you can push a little plastic button and it turns on without the faceplate, nobody would have a clue to look for this.
