My only concern is how close many fifth wheels run to the beds of our trucks. The farmer ball setup allows far more movement of the trailer so be really careful on off-camber ramps, uneven ground, etc. Other than that should be fine.

Most people don't recommend using the adapters. It puts more stress on the pin box on the fifth wheel trailers. Can do lots of damage to the trailer if it isn't built heavy enough.
The goose does allow for more oscillation than a standard 5er hitch, but you can get tilting heads (side-to-side, in addition to the front-to-rear movement) on some of the 5er hitches.
