Smoked Beef

Oh it is the season for smoked beef or smoked anything for that matter!! I got the smoker out this afternoon and got it fired up. Smells SO good!! Smoking a beef arm roast right now at about 200 degrees, it has been going about an hour and a half, should be done around 9. I can hardly wait!! Smoking it over hickory with medium smoke. <br><br>How many other like to smoke food? Surely some of you Texans smoke your meat!!<br><br>Thanksgiving coming up and it is a toss up over smoked turkey or fried turkey. Just cant decide. Might have to do one of both! Might add a smoked goose and some smoked duck in there too if I get a chance to go shoot some ducks and geese.<br><br>Any other smokers on here? If so what do you use to smoke your food and what kind of food are ya smoking?<br><br>Keith

Cattle Hauler; I really wish I lived closer to you. I would love to buy one one of those from you to put in the freezer!! You just cant beat fresh farm raised beef!! I have only had the opportunity to eat fresh off the steer beef once. All I can say is there is no substitute!! Farm fresh beef has a totally different taste than store bought or even meat market. Kinda like the difference of eating a store bought chicken compared to a fresh chicken off the farm. I envy you Cattle Hauler!! <br><br>One of these days Ill get my place in the country so I can raise a few chickens, a sow or two and a few head of cattle.<br><br>Keith

Hog killing this week at a friends house. Got everything ready to cure some hams and Smoke some others! Man them smokers running all day and night whewwww I gained 6 pounds thinking about it ;D

Not bragging here, you just cant beat smoked food if done properly.<br><br>Im using a New Braunfels smoker with offset firebox. Usually use about 3 Lbs of chunk charcoal to get started and then add several pieces of hickory or mesquite. You just cant beat some good smoked food! I usually get 4 deer in the winter (wife can get permits also) I butcher one whole deer into jerky meat to be smoked. Found out the hard way not to take any jerky to work, it disappears like money!! ;D ;D <br>Two deer are made into a combo of deer burger mixed with beef fat and pork fat and the 4th deer is made into nothing but steaks and roasts. Man I cant wait for deer season! I've been out of deer for months and just about out of walleye, catfish and white bass. Time to get some deer!!<br><br>Keith

I have a small smoker and have used it several times. Problem is I have a hard time keeping the temperature up in the winter. Seems like I can only use it during the summer.

My dad had one of those and cussed that thing from the day he got it till the day he died. He couldnt get it warmed up to save his butt!! (butt as in pork butt :P ) Anyway I bought a big smoker with an offset firebox and couldnt be happier. It takes quite a while to get the hang of it to keep the temp where you want it but once you get it figured out it is awesome!! <br><br>Keith

Man them smokers running all day and night whewwww I gained 6 pounds thinking about it ;D<br>[/quote]<br><br>HOG KILLING Man I know what thats like.<br>We kill hogs every Thanksgiving Day rain, shine or 12 ins. of snow.<br>After cureing hams, shoulders, jowels, and bacons last year we ground a little over 1600 lbs. of sausage. <br>I'm here to tell ya thats alot of meat for a back yard operation. ;D<br>Around my father-in-laws house it's a 3 day event every year.<br>I married into the job. It's alot of work but the fresh T-loin, backbone, and all the rest is worth the work. <br>Anyone want to come over and play this Thanksgiving ? :<br><br> : Eddie : 8)

well i just got in. we had a family get together before i shove off to kentuky for 6 months. <br><br>we smoked a 40lb. feral hog, sow. when we skint her, we just left gutted her, skint her, and left her all toghether. then put her in a 100qt. ice chest. next day after he meat bleed out, we seasoned her, and let her marinade all night. put her on the pit last night and smoked her all night at 250 degrees. <br><br>also smoke a brisket. very very good. we had a great time, and im really gonna miss my family. :'(<br><br>
