I have seen some big cattle in the past, but this guy is huge!

That is a steer. I doubt you will ever find an intact bull that large. I'm not surprised he is a Holstein cross......they can be some huge bulls.

You got me curious as I was always under the impression that a steer was the American word for a bull. Looked it up and it appears that the only difference between a bull and a steer is that the steer is castrated. Is that correct?

Yep....and a steer never stops growing......a bull will.

Yep those things can get big......Along the interstate in Wy. there is a cross on the hillside north side of west bound lanes. History (from a memory I have of reading this so somethings are vague) has it a man from somewhere in Europe in the 1800's came to that valley to escape his whatever...anyway they said he raised steers bigger than had ever been seen at that time. He originally lived down the hill along a creek but wanted to be buried up on the hill away from all the traffic (wagon trains) then we built a interstate almost on top of his grave.
