favorite holiday hors d'oeuvre's
I just got to thinking about my favorite holiday snack and I thought I would pass it on. Because I fish constantly my favorite dish to make at the holidays is a smoked fish dip. I use smoked Steelhead but you can use whatever your favorite smoked fish is. you make like this
3/4-1 cup of chopped smoked fish ( I use the food processor to grind mine)
1/3 cup of chopped onion
1 large container of whipped cream cheese
1/4 cup of fresh horseradish (more or less depending on the amount of bite you want)( I always use a little more)
1/4 cup of sour cream
blend these ingredients with an electic beater until they are mixed and the mixture is like thick frosting
eat this on your favorite cracker and wash down with a couple barley pops its always good this time of year ,but watch out it's addictive.

I spent a thanksgiving in Mass. one year. I was working around Worchester, and decieded to stay there for that holiday. Eventually, a buddy and I were invited to a customers home for dinner. A great bunch of people, neverless. Anyway, they had this little side dish of bananna fritter with lemon sauce. Man, that stuff was good.

I use the same recipe with Red Salmon, yummy stuff! My other fav. holiday treat.

Spread cream cheese over a piece of thin sliced ham or pastrami, wrap it around a kosher dill pickel. Hold together with 4-5 tooth picks, then slice into bite size pieces between the tooth picks.

On a standard Triscuit
- spread Philly cream cheese
- add a spoonful of hot pepper jelly
- top with one or two or three slices of jalopeno pepper
(the ones that come in the little jars already sliced)
- toss in and chew
Repeat until something runs out.
Occasionally lubricate with appropriate beverage.

Oh man! I'm getting hungry! I forgot my favorite Christmas Eve party hors d'oeuvre:
Pepper Shooters, cherry peppers stuffed with prosciutto & provolone cheese, soaked and stored in a garlic & olive oil marinade. Christmas morning, look out!

I never tried capers til last year...mmmmm they were good with the jumbo prawns, raisin pie, my brothers beef jerky, short bread cookies, peanut butter cookies, jalapeno mustard for the corn dogs, bbq steak, and of course my very own very best you will ever try...LASAGNE! I make the sauce from scratch...blanch the Roma tomatos the day before and blend them with the paste and spices, freeze it overnite, thaw and mix with the rest of the secret ingredients. mmm mmm
I make it with the very best and leanest meat as well as five different cheeses and homemade pasta.
