I remember once in Home Economics we made duck and goose. I remember laying the salt and pepper to the duck then stuffing it with apple slices and orange slices. We also used used some other seasonings like rosemary and thyme. It came out very good! Mind you this was for a whole duck roasted in the oven like you would a Thanksgiving turkey. Sorry I don't have any other experience with them.

Check these out though: http://www.recipezaar.com/recipes.ph...earch&Searcht=

Now don't laugh about being in home economics! I did take 3 semesters of agriculture with welding, woodworking and such, however I did notice some distinct differences in agriculture vs. home economics. In ag when it was hot outside it was hot inside, when it was cold out it was cold inside. There was no food and there were only dudes! Home ec classes were air conditioned, there was food and there were tons of good looking girls. The guys didn't laugh so much when you told them that.

A duck goes into a drug store, He shows the pharmacist his quaked lips..

The pharmacist sells him some chap-stick, when asked how he was going to pay for it he replies.. Just put it on my bill

I'll ask the "Boss" when she gets home, I'm sure she has a favorite way to cook them. Just checked with her--no good info.
