It's my pot and I'll stir it if I want to. If you're not careful, I'll stir your's as well!

Coffee question
I have a one gallon container of drip coffee, not instant, (Tim Horton's) that I have not yet opened. As I only drink a couple of cups of coffee in the morning, I am afraid that once I open this large a quantity of coffee that in time it could lose it's flavour. (Where I was brought up, it's flavour and not flavor) I could freeze the majority of it in small packets and hope that will work, but have been reading that coffee connoisseurs say that freezing destroys some of the flavor. So now what?
What are your suggestions for keeping a lot of coffee fresh after the container is opened?

There was a bit of a debate back in New Zealand, (where I'm from) about whether to keep it in the freezer or just buy smaller quantities and keep it fresh. Some said it tasted diffeent frozen, others didn't notice. And this coming from a country who has the 2nd highest, (maybe highest?) number of cafe's per capita in the world. Coffee is taken SERIOUSLY!
Personally, I think it depends on whether the grounds or beans sealed right, and if the humidity is high when you seal it up. I don't drink it so I can't say from experience, but my brother is a bit of a coinnesuir, (sp?) and he freezes his, if that helps.

Vacuum pack it in smaller portions.
Freezing dries it out and reduces the aromatics in the oils so your cup will taste flat.
I never used to keep fresh Copenhagen in the freezer for the same reason.

Whole beans are good coffee. I got tired of the grounds all over the place. We went generic easy, big plastic can of Folgers grounds. The end.

I have the end all solution! Brew all of the coffee up, go online and get all necessary ingrediants and whip up a batch of Kahlua. Bottle it and every time you need a small pick me up take a short snort. You will satiate you caffiein need as well as have a rosier outlook on problems due to the alcohol content. You can keep in freezer or store in pantry. Just make sure lid is on tight.

We used to buy large bags of coffee and split it up into small bags. then my wife brought home a Kurig, I said she was crazy, I was wrong. Now we just brew a cup at a time. No more storage concerns.
coffee is a spice. treat it like any other spice and dont mill it till you need it.
If it already ground, I would seal the balance in an air tight container with as little air in it as possible (pack it full). also, break it up into several smaller jars. the oils in the coffee evaporate (like all spices) so the less you expose it to air, the better. using smaller jars will minimize the amount your opening each day.
