Flagging Temp Gauge

Flagging Temp Gauge

I have 99 Ram 2500 12v. I replaced radiator and t-stat, still have temp gauge going from 190 to 160 slowly. I removed vent hose and added coolant until I had steady stream out vent. Still having same problem, I ordered another t-stat hoping maybe just bad t-stat. Anyone seen this before?

Sounds 100% normal to me.
