No boost elbow, the truck is completely stock besides the exhaust and programmer. I really expected a very noticeable difference when you're talking about adding 60-100 RWHP (80-120 crank) out of a tuner, but honestly its still a slug that gets smoked by SOHC neons.

My main question is...is this normal, or is there something wrong with my truck that it seems so slow?

100hp is a night and day difference. Most likely you have a problem from what you describe. You should put a scanner on it to check your rail pressure. My truck was a total turd with bad injectors, runs like a corvette now. When I was in high school i had a friend with a 4cyl mustang that did 0-60 in 17 seconds. he would take hills in 3rd at WOT and loose speed. If that is the way your truck is running there must be something wrong.

I don't have any problems climbing hills or anything like that, like I said the truck runs great and strong when not hammering on it

What should my RP be at? Have to check if the predator readsthat

just went out and checked my RP's

Idle = ~4700-5100
WOT = ~21,200 - 23,300
Cruising @ 55 in OD = ~6520

Just doing a quick search around the boards, those numbers seem pretty good.

For some reason the truck seemed a lot more responsive tonight and got around a 10 second 0-60. I noticed when I'm testing my 60's, i'm not really hammering it, just rolling into the throttle which probably kills the times a little as well.

Maybe I'm just paranoid

My 04 was a little sluggish on the top end to till I cranked the timing on it, then it was an entirely differant animal. Do a search on here for timing or roktec sensor. It worked for some but not others, but from what your describing, it sounds like your will benefit from that mod.
