I would wait to get Lorenz new IR spring. As for spring manufacturers I know Lorenz & KORE use different manufactures. I think the spring quality you get from Lorenz, Carli & KORE is a higher level than you would get from Skyjacker, Superlift, etc.
For me I went from a stock spring to a VR/IR spring and the ride is definitely much better on the road, dips and speed bumps are now no big deal.
With a VR/IR spring you definitely get the best of both worlds.

You're right, Lorenz and KORE are using different manufacturers. Lorenz is using the same folks the rest of us use, Kent has another one of his proprietary deals with his manufacturer.
I went from a stock spring to a stiffer coil and back to the linear rate coil I run now. It rides great on the road and it definitely soaks up more than speed bumps and dips...
It's all in setting up the shocks correctly....and you know what I mean.

I know exactly who Kent uses, just by luck one of my cup buddies happens to be friends with the owners and the funny thing is he looked at a KORE spring and said “These are made by &%$#^$”. As for Lorenz & Caril springs, I am pretty sure that they are not made by the same manufacturer as Skyjacker, Superlift etc.
In regards to shock valving it is important, but what is more important is to be honest with yourself and have the shocks valved for what you are going to use them for and to match the rest of the suspension system.

You two seem to remind of an old married couple.....
but from each of you, what spring rate would you recommend for a 2500 that will be 85-90% on road, and 10-15% off road, though probably never Baja.
I'm looking for a smooth ride first and foremost.

I would guess somewhere in the range of 440 to 500. The right way to do it would be to get your corner weights as the truck is driven most or all of the time and approximate the sprung weight unless you have the means and the time to take actual measurements. I have a pretty good handle on what a 3500 LB QC weighs but it will be different for a short bed plus whatever interior config. you have as well.
If you decide to get the 5100’s with a 2” lift you may want to contact Lorenz first.

2500 QC SB has a typical sprung weight of about 1900/corner, give or take a 100lbs.
Soooo.....if you have 9" of useable travel and a 1900lb sprung corner weight, we end up with a Wheel Rate of 528lb/in and a Motion Ratio of 1.341 which means in plain English-~400lb coil rate.
Playing with the sprung weights within 100lbs either way and the travel +/- 1" only changes the coil rate 15-20lbs either way.
If it was me, I'd spec a 400lb coil, in light of your future shock plans. I run a 360lb coil and it works great, off road and on. Valving is key, just like sloryd said. And Don can valve 'em..

If you are really looking for a smooth ride you need to deal with leaf packs. There again I would say at a minimum you need to do a mini pack but ideally a new set of full leaf packs would best with a set of correctly valved shocks.
