Ya it does. You can tell when it down shifts and unlocks the rpms go through the roof. Then when it locks up again it drops the rpms a bunch.

I agree on the TC locking/unlocking thing. Mine does it to. I guess this awesome trans has to have at least one fault, right?!?!?!
So when on the highway, turn it off until hilly, then flip it back on. Gotcha.

What about backroads? Frequent stops through little towns, slow curves...etc....keep it on, right?

That's alright. We're all still learning...

As far as your towing, I would say that you just have to drive it the way it feels comfortable to you and your truck. You don't want to lug the engine by having it in too high a gear and you don't want to have your rpms through the roof either. You have to find that happy medium and that will be different for each person....

And it really should feel like a 7 speed trans if it is indeed locking up in 6th. I swear I only count 5 shifts and then it's done. Maybe 6th is so high that you really don't feel the TC lock up......

No, you don't have to take it out. I would just leave it in tow haul when I am towing, unless you just hate the firm shifting. Alot I suppose would depend on your preference. It won't hurt the tranny to be in regular drive it will just shift different. A friend of mine tows a big 40 foot toy hauler, and he experiments with tow haul and sometimes he just takes over and uses the paddle to keep it from up shifting. Alot depends on how heavy the load, how steep the hill, and how curvy the road. I try to drive mine as close to the peak torque around 1800 rpm for fuel economy and performance. I use the tow haul more for deceleration down steep downgrades and or on curvy roads and then I will keep it in 4th gear or so to keep it under control.
No set rules though. Just experiment till you find what works for you.

The 08's have the gear selection on the shifter ****,I found by using it when towing the transmisson does not hunt for gears or downshift as much on the highway

I have drove a 08 cummins but we are thinking about a 4500 Cab chassis. But right now we have a duramax with a six speed auto and it locks up in fifth then shifts to 6 and stays locked up. You really can't tell that it even shifted. Is the Dodge like that?
