Do ALL 1st gens have no steering feedback?
My 83 with all new front end parts and a fresh alignment STILL has no steering feedback. It's been too long to remember if my 89 was the same. If I begin a turn and let go of the wheel, the truck keeps turning. My friend's 83 F350 does the same. Is this typical? It certainly wasn't with my 95 or my 03!
Me tambien !
your lack of returning to center is not normal. That's an alignment issue, or your steering gear might be going bad.... although not as likely.
I would highly suggest you not letting go of the steering wheel while driving.
If you do, you might be considered to be related to one of the numb-nuts that spends their time here texting with two hands while "supposedly" driving.
We wouldn't want that, now would we ?

If the front end's just been rebuilt I would guess they didn't put enough caster into it. A little extra doesn't hurt.
There is a difference between relaxing your grip or holding your hands just off the wheel versus letting go and doing something else with both hands.
